Induction vs Gas Cooking: Pros and Cons

Induction Cooktops

Induction cooktops use a coiled copper wire to create a magnetic current to heat pots and pans. If you have an induction cooktop, you will need to make sure your pots and pans are designed to be used with an induction heating surface.

Induction cooking only heats the pot or pan rather than the area around it or the cooking surface. This allows for faster cooking since the heat source is direct rather than radiated through the pot or pan.

Pros & Cons

Induction cooking offers benefits including:

  • Eco-Friendly. Induction cooking is more environmentally friendly than gas cooktops or traditional electric cooktops because they require less electricity and no gas usage.
  • Cook Quickly. Induction cooktops cook food more quickly. They can boil water two to four minutes faster than the other options.
  • Safety. Since the pots and pans are what produce the heat, it is safe to touch the cooktop both while cooking and after.

A few of the drawbacks of induction cooking include:

  • Price Point. Generally, induction cooktops have a higher price point and require special pots and pans which can be an added cost.
  • Noise. The cooktop will likely make a humming or buzzing noise.
  • Thermometer Usage. Digital thermometers may not work due to the magnetic field.
  • Adjustment. If you are used to gas it will be a very different experience.

A gas cooktop uses natural gas to ignite a flame to cook your food. It works by adjusting the amount of gas with a knob to determine the size of your flame. The larger the flame the hotter your pot or pan will get.

The heat from the flame will radiate through the pot or pan you are using and transfer to your food.

Pros & Cons

Gas cooktops offer several benefits including:

  • Lower Price Point. Fairly inexpensive when compared to electric or induction.
  • Visual. Cooking over a flame gives you a visual and reference while cooking.
  • No Electricity is Needed. Gas cooktops can still be used without electricity. If you are suffering a power outage you can still cook dinner for the family.

Some of the cons of gas cooktops include:

  • Smell. The smell of the gas and fumes produced while cooking can be bad for your health if not vented well.
  • Wasted Heat. Loss of heat while cooking - the flames are not contained so heat is wasted.
  • Slower Cooking. Slowest option for cooking your food.
  • Uneven Heat. Easier to burn your food due to uneven heat.
  • Safety. There are risks of gas being left of accidentally and hot cooking surfaces to consider.
